What is "commercial tableware"?

High-strength Echizen ware was developed in a project with Fukui Prefectural Industrial Technology Center in fiscal 2006 so that Echizen ware dishes can be used not only at home but also at restaurants.

The ceramic base was strengthened and the glaze (coating chemical for improving strength) was improved so that the pottery dishes can be washed in restaurant dishwashers.

This new type of Echizen ware places emphasis on practicality of use at restaurants.

2

Commercial dishwashers can be used.

Conventional Echizen ware needs to be hand-washed and treated carefully. As commercial dishwashers can be used, dishes can be washed speedily and easily.

The rustic texture is retained

Echizen ware is one of the Six Ancient Kilns of Japan. This is Echizen ware developed for commercial use, but craftsmen make each piece individually and Echizen-yaki still has a rustic and simple texture.

We used pottery because it retains heat better compared with white China. Its best point is its simplicity. Customers are delighted when they find out that the dish is "Echizen ware".

Each dish has a unique texture. The chef feels a sense of discovery when serving each dish. Employees know that Echizen ware is special, so they handle it very carefully.

In Akiyoshi restaurant, pickles and kimchi are served on Echizen-yaki. The hand-made rustic texture makes the food look even more delicious.

Some customers ask us "Where was the dish made?" and it invites a conversation.

"I am a big fan of Akiyoshi. It is my pleasure to make dishes for Akiyoshi.

I use Echizen clay and craft each dish with all my heart using a potter’s wheel."
